Spatchcock a  Chicken

HOW TO

Perfect chicken technique for roasting or grilling!

Spatchcock Defined: To split open. 

Benefits:  Even and faster cooking.  

You'll need a sharp knife or scissors. 

Cut along each side of the backbone. 

Remove the backbone and save for broth. Cut along the back of the breast bone. 

Flip the chicken over and press on the center of the breast meat to lay flat. 

Season and cook as desired.
