Watermelon, Blueberry, and Mint Salad are perfect for a hot day. We actually enjoyed another batch at the beach on Sunday. It's light and refreshing, and the beer adds the perfect amount of tartness. When looking for a beer, stick to something high in acidity and low in bitterness. Depending on the sweetness of the fruit, you may need to add more or less sugar. I feel most fruit is sweet enough without sugar but adjust to your taste.
Watermelon Blueberry and Mint Salad Variation
- Whole30 - Omit sugar and beer and serve as a fresh fruit salad
- Paleo - Substitute sugar for honey
- Gluten-Free - Substitute beer for a gluten-free beer or seltzer

Description
A sweet Watermelon, Blueberry, and Mint Salad served with a sweet and tart dressing made with a Berliner Weisse from Tequesta Brewing Co. Plus a cooking video.
Ingredients
- 4 cups Watermelon- Cubed
- 1 cup Blueberries
- 2-3 Tablespoons Mint- Chopped {Measure chopped mint}
- 1-2 Tablespoons Powdered Sugar- Depending on desired sweetness*
- ¼ cup Beer
Instructions
- Combined the watermelon, blueberries and mint in a large bowl.
- In a separate small bowl, stir together the powdered sugar and beer. Allow the mixture to sit a moment to allow the sugar to fully dissolve.
- Pour the sugar mixture over the fruit and stir. Allow to sit for 30 minutes in the refrigerator to chili and serve.
