The perfect cocktail for Cinco de Mayo! This Spicy Jalapeno Margarita gives you a little heat with a hint of sweetness from a simple pineapple and jalapeno simple syrup. The recipe includes tips for making jalapeno-infused tequila. 



Spicy Jalapeno Margarita

  • 1.5-ounces Tequila 
  • 1-ounces Lime or Pineapple Juice
  • 0.5-ounces Pineapple and Jalapeno Simple Syrup* 
  • Ice
  • Salt - Optional
  • Extra Lime, Pineapple, and Jalapenos 

Pineapple and Jalapeno Simple Syrup

  • 1/2 cup Sugar {granulated, honey, maple, agave, or coconut sugar}
  • 1/2 cup Water
  • 1 Jalapeno - sliced
  • 1/2 cup Pineapple - diced*


Spicy Jalapeno Margarita

  1. In a jar or glass, mix the tequila, juice, and simple syrup. Stir to fully combined. 
  2. For a margarita on the rocks, add ice cubes to a cocktail glass and pour in the margarita mixture - straining the liquid from the ice in the shaker.
  3. For a frozen margarita, add all the ingredients to a blender and blend until smooth. Serve in a cocktail glass. 
  4. Serve with extra slices of jalapeno and lime.

Pineapple and Jalapeno Simple Syrup

  1. Add all the ingredients to a small saucepan. Heat over medium-low heat until the mixture starts to bubble. Mash the pineapple and jalapeno to release extra flavor. 
  2. Remove from the heat and allow to sit for 15 minutes - longer for spicier syrup.
  3. Strain the mixture and add to a jar. Store it in the refrigerator until ready to use.  


Regular simple syrup can be substituted for the flavored. 

Fresh or canned pineapple works for this recipe. If using fresh, you can add the core to the saucepan in place of the fresh pieces. 

For a salted rim, pour salt onto a small plate or bowl to lightly coat the bottom. Rub a lime wedge around the edge of a glass and dip the glass in the salt.
