These Soft Scrambled Eggs without milk are a quick and easy Whole30 and Keto breakfast. Made without milk or cheese, they still have a creamy texture you'll love!
I always thought scrambled eggs were supposed to be fully cooked and dry. Anything less than that was undercooked eggs. I couldn't eat them without cheese to help with the dryness. It wasn't until culinary school that I learned what soft scrambled eggs were. And I've never looked back!
Soft scrambled eggs are cooked over low heat and finished just when the eat start to set, making them creamy without any dairy.

How to Make Scrambled Eggs Without Milk
Made with very simple ingredients in just a few minutes, this recipe is super easy and flavorful.
- Eggs
- Oil - Your favorite oil will work for this recipe. A few recommendations: extra virgin olive oil, avocado oil, ghee, and butter.
- Seasoning - Salt and Pepper
- Herbs - Dill, parsley, and chives are great additions

Instructions
The most important item you need for scrambled eggs is a nonstick pan. The eggs are cooked over low heat and will 100% stick if using a stainless steel pan. {Maybe not 100%, but it's not worth the risk}.
To start, break the eggs into a bowl and whisk until all the whites and yolks are combined.
In the photos above you can still see some of the egg whites still. Continue beating the eggs until they're completely combined and no pockets of white are visible.
Side Note: This also adds air to the eggs making them a little fluffier.
Heat your nonstick skillet over medium-low heat. Once warm, add your oil of choice and swirl the pan to evenly coat the bottom and sides.
Add the eggs and slowly stir with a spatula, scraping the bottom and sides as you go.
Once the eggs are just set and no longer runny, remove them from the heat. Season with salt and pepper and herbs if desired and place on a serving plate to enjoy!
Cooking Tip: If the eggs start to cook too quickly, remove the pan from the heat and continue stirring.
Whole30 or Paleo Substitutions
This recipe for scrabbled eggs without milk or cheese, this is a great option while doing Whole30 and Paleo. The eggs have the same texture and creaminess while still being compliant. You won't miss a thing!
Variations
The eggs are great on their own or seasoning with chives, dill, or parsley. Add the herbs at the end of the cooking process right before you're ready to serve.
A great option if you're not dairy-free is to add a little goat cheese to the eggs at the end for extra creaminess!

Instructions

- In a bowl, crack the eggs and whisk together until the white and yolk are well combined.
- Add oil to the pan and swirl to coat the bottom and sides.
- Add the eggs and stir with a spatula, constantly scraping the sides and bottom.
- Once the eggs are set and no longer runny, remove from the heat and season to taste.

Notes
Eggs are cooked when they're no longer runny but still shiny.
Whole30: Omit butter.
Herbs: Add ½ tablespoon chopped chives, dill, or parsley at the end of cooking for extra flavor.
