Grain and refined sugar-free, these paleo granola bars are perfect for breakfast or a snack on the go. You can use any combination of nuts and toppings and substitute maple syrup for the honey for a quick vegan granola bar. 




  • Preheat oven to 325 degrees. 
  • Mix the almonds and cashews. To chop the nuts, place in a food processor and pulse into small pieces. Add the pumpkin seeds and pulse two more times. Pour into a large bowl and add the flax seeds, shredded coconut, and cinnamon. 
  • In a small bowl, add the coconut oil and honey. Heat in the microwave for 15 seconds to melt the oil and warm the honey. Add the coconut sugar and stir to coat the nuts and seeds thoroughly. 
  • Place in a baking pan lined with parchment paper {a loaf or 8x8 pan works best for this recipe}. Press the mixture into the bottom of the pan using a bowl or measuring cup. 
  • Bake for 30 minutes or until the edges are starting to brown. 
  • Remove from the oven and cool for an hour. 
  • Once completely cooled, cut into bars and store in an airtight container for up to one week. 


Use maple sugar if vegan.
