This recipe comes from my desire to go hiking! I want to go to the mountains, and these granola bars sounded like the perfect snack to have while sitting on the side of a mountain, enjoying the view.
What are Paleo Granola Bars
Oats are the primary ingredient in most granola bars. For this recipe, oats are replaced with a mix of nuts and seeds. The bars are also free of refined sugar. Honey, maple syrup, or coconut sugar gives the bars a sweet taste, and the sweetness can be adjustable to your personal preference.
How to make Paleo Granola Bars
Any combination of nuts or seeds will work in this recipe. The nuts can be left whole or crushed with a food processor or knife - crushed nuts will hold together better in bar form.
Ingredients Needed:
- Nuts {Pecans, Almonds, Walnuts, Cashews}
- Seeds {Pumpkin, Flax, Sunflower}
- Shredded Unsweetened Coconut
- Coconut Sugar
- Coconut Oil
- Raw Honey
- Cinnamon
To start, add the nuts and seeds of choice, shredded coconut, and cinnamon to a large mixing bowl. In a separate bowl, add the coconut oil and honey. Heat the mixture in the microwave for a few seconds to melt the coconut oil. Add the liquid to the nuts and stir to coat thoroughly.
Place the nut mixture in a loaf or small baking pan lined with parchment paper - pre-heat oven to 325 degrees and bake the granola for 30 minutes. Remove from the oven and cool completely. This step is very important! The bars will harden as they cool. Once completely cooled, cut into bars and store in an airtight container for up to one week. This recipe makes 6 full size bars or 12 mini.
Granola Bar Variation
This recipe calls for 2 cups of nuts, and any combination will work. They can also be made with a single nut, like almonds, if you like. Other variations include:
- Mix in chocolate chips or dip the cooked and cooled bars in melted chocolate.
- Drizzle melted chocolate over the top.
- Fold in ¼ cup of dried fruits chopped into small pieces before cooking.
- Substitute maple sugar for the honey for vegan bars.
- Crumble the cooked bars into small pieces to use on yogurt.
- Omit the coconut sugar to reduce the sugar in the recipe. The honey can be reduced, but the bars will not hold together as well.
Make-Ahead and Storage
These bars will last up to a week in an airtight container - perfect for meal prep!

Ingredients
- 1 cup Almonds
- ½ cup Cashews
- ½ cup Pumpkin Seeds
- 2 tablespoons Flax Seeds
- ¼ cup Unsweetened Shredded Coconut
- 1 teaspoon Ground Cinnamon
- 2 tablespoons Coconut Oil
- 2 tablespoons Raw Honey*
- 1 tablespoon Coconut Sugar
Instructions
- Preheat oven to 325 degrees.
- Mix the almonds and cashews. To chop the nuts, place in a food processor and pulse into small pieces. Add the pumpkin seeds and pulse two more times. Pour into a large bowl and add the flax seeds, shredded coconut, and cinnamon.
- In a small bowl, add the coconut oil and honey. Heat in the microwave for 15 seconds to melt the oil and warm the honey. Add the coconut sugar and stir to coat the nuts and seeds thoroughly.
- Place in a baking pan lined with parchment paper {a loaf or 8x8 pan works best for this recipe}. Press the mixture into the bottom of the pan using a bowl or measuring cup.
- Bake for 30 minutes or until the edges are starting to brown.
- Remove from the oven and cool for an hour.
- Once completely cooled, cut into bars and store in an airtight container for up to one week.
