Cinco de Mayo is almost here. Last year, we had our first get-together with friends after a very long and lonely time at home. We all sat in the driveway, and I didn't cook any food. Everyone brought their own drinks and snacks. It was exciting to see people, but it was so hard and weird not cooking a meal for our guest. This year may look the same, but we'll have this delicious mango shrimp salsa to enjoy!
I like meals like this that can be made ahead of time and packed up for trips to the beach, park, or a friend's house. This recipe is perfect for that! Made in advance, it only gets better the longer it sits.
What is Mango Shrimp Salsa
This is kind of like a chunky pico de gallo that is great for eating with scooped chips or in lettuce wraps. The cucumber and mango give this dish a cool sweetness while the jalapeno gives it a little kick!
You'll need the following ingredients:
- Shrimp - peeled, deveined, and cooked {if you're using raw shrimp, see our post for 5 minutes Air Fryer Shrimp}
- Mango
- Red Onion
- Cucumber
- Jalapeno
- Garlic
- Cilantro
- Lime Juice
- Salt and Pepper
- Bell Pepper - Optional
- Tomatoes - Optional
To make, chop all the shrimp, mango, red onion, cucumber, bell pepper into bite-size pieces. {Check out my Instagram for a tutorial on how to peel and devein shrimp and easily dice a mango.}
Place all the ingredients in a large bowl. Mince the jalapeno and garlic and add to the mixture. If you prefer a milder salsa, add ½ a jalapeno with the seeds removed. If you like it hot, add a whole pepper with seeds.
Next, add lime juice and season with salt and pepper as needed. Store in the refrigerator until you're ready to serve.
How to Serve
This dish is great served as a dip with tortilla or plantain chips or as a taco with lettuce wraps as pictured below.
For tacos, serve with extra lime wedges, finely diced jalapenos, and chopped cilantro on the side.
Recipe Variations
Of course! This recipe without the shrimp would make a delicious vegan mango salsa. It would be great on fish, grilled meats or veggies, tacos, or as a simple dip.
Use pineapple instead! Or papaya! You could also leave the fruit out completely.
Yep! Just remove the seeds as they can water down the dish, and peel cucumbers with tough, waxy skin.
Bibb lettuce or romaine works great. You could also use sliced jicama or cabbage. For dipping, sliced mini bell peppers add a great crunch.
Make-Ahead and Storage
The shrimp can be cooked in advance or you can purchase pre-cooked shrimp for this recipe. Mix all the ingredients together and store in the refrigerator for 3-4 days or until ready to serve.
Leftovers are great for lunch!

Ingredients
- ¼ medium Red Onion - diced
- ½ English Cucumber - diced
- 1 small Mango - diced
- ½ - 1 Jalapeno - finely chopped {add more depending on your heat preferance}
- 1 clove Garlic - minced or grated
- 8 oz cooked Shrimp - peeled and chopped
- 2 Limes - Juiced
- 1 handful Cilantro - chopped {about 2 tablespoons}
- Salt and Pepper to taste
Instructions
- In a large bowl, combine the onions, cucumber, mango, jalapeno, garlic, and shrimp. Stir to combine.
- Add lime juice, cilantro, and season with salt and pepper as needed.
- Serve cold with your favorite chips, tortillas, or lettuce wraps.
