This simple Whole30 and Keto Egg Drop Soup is made with a few simple ingredients and only takes 10 minutes to make.
It doesn't get cold here very often, but it's cold right now. I'm currently curled up by the space heater, trying to stay warm. My husband even put on a hoodie! {He's never cold and usually running around in shorts and a t-shirt when it's in the 50s. I start getting chilly when it drops into the low 70s.
When I'm cold, I crave soup, and I've been craving egg drop soup for weeks. It was my go-to when ordering Chinese food. This version is gluten and grain-free and comes together super quick. I also added some extra veggies to the broth to bulk up the soup.
How to make egg drop soup
This recipe is super simple, and you likely have all the ingredients in your kitchen right now. To start, you'll need the following:
- Broth - Use your favorite, good quality chicken or vegetable stock. Bone broth would work great too. For a vegetarian egg drop soup, use vegetable stock.
- Eggs - It's the most important part of the recipe, after all.
- Garlic and Ginger - Fresh is best but dried works if it's all you have on hand. Cooking tip - ½ teaspoon of garlic powder equals 1 clove of garlic.
- Vegetables - Extra veggies are optional, but I like to include shredded carrots, cabbage, and green onions in my dish. Sliced mushrooms are good too! Use whatever you have on hand.
- Sesame Seed Oil - Another optional ingredient, but it really elevates the flavor of this dish.
- Fish Sauce - Another ingredient that gives this soup another layer of flavor. Omit if vegetarian.
- Tapioca Starch - This is a great gluten-free alternative to help thickens the soup. Again it's completely optional. You can use corn starch if you're not grain-free.
- Salt and Pepper - The essential ingredients in every dish!
Now, let's make soup! To start, heat a stockpot over medium heat. Add enough oil to lightly coat the pan's bottom and add the garlic, ginger, and white part of the green onions. Sautee for 1 minute to soften. {If using dried, only cook the greens onion and add the dried seasoning with the broth}
Next, add the veggies and stir to coat in the oil - cook for another minute.
Add the broth, coconut aminos, fish sauce, and sesame seed oil to the pan, stir to remove veggies from the bottom of the pan, and heat until the broth starts to boil lightly.
In a bowl or measuring cup, whisk together the eggs. Make sure the white and yolk are well combined.
In another small bowl, mix the tapioca starch with tap water and stir to dissolve completely. Stir the tapioca slurry into the broth.
Allow the broth to return to a light boil and slowly stir in the egg yolks. This helps create little ribbons of eggs. Adding the eggs too quickly will form large clumps of eggs.
Once all the eggs are added, taste and add salt and pepper as needed. Make sure you taste the soup before adding salt, as the broth could be salty. Add a little until you reach the desired flavor for your taste. Now, it's ready to serve. Top with extra green onions and a drizzle with extra sesame seed oil. It's that easy!!
Whole30 and Paleo Variations
This recipe is Whole30 and Paleo-friendly. Just make sure you check the broth and fish sauce labels to ensure they're complainant. Egg drop soup is also a great keto meal!
How to Storage Leftovers
This recipe reheats well. Just store in an airtight container in the refrigerator for 2-3 days. If using bone broth, the soup will turn to a gel once chilled but thins out when heated.

- 1 inch Ginger - peeled and sliced*
- 2 cloves Garlic - smashed*
- 1 Green Onion Sliced - separate the white and green parts
- 1 cup shredded Cabbage, Carrots, or sliced Mushrooms - Optional
- 4 cup Broth - Chicken or Vegetable*
- 1 tablespoon Coconut Aminos
- ½ teaspoon Fish Sauce
- 1 teaspoon Sesame Seed Oil + Extra for drizzling over the finished soup
- ½ tablespoon Tapioca Starch
- 2 tablespoons Water
- 4 large Eggs
- Salt and Pepper - to taste
Instructions

- Next, add the shredded cabbage and carrots and stir to coat in the oil - cook for another minute.
- Add the broth, coconut aminos, fish sauce, and sesame seed oil to the pan, stir to remove veggies from the bottom of the pan, and heat until lightly boiling.
- In a bowl or measuring cup, whisk together the eggs. Make sure the white and yolk are well combined.
- In another small bowl, mix the tapioca starch with water and stir until dissolved. Stir the tapioca slurry into the broth.
- Once the liquid returns to a low boil, slowly stir in the egg yolks. This helps create little ribbons of eggs in the soup.
- Once all the eggs are incorporated, taste the soup and add salt and pepper as needed.
- Soup the finished soup into a bowl and serve with the tops of the green onions and a drizzle with extra sesame seed oil.
Notes
You can substitute 1 teaspoon of dried garlic and ginger for the fresh.
Slowly drizzle in the eggs. Adding the eggs too quickly will create large clumps. I recommend using a cup or bowl with a spout for easy pouring.
Store leftovers in an airtight container in the refrigerator for 2-3 days.
Vegetarian Egg Drop Soup - omit the fish sauce and use vegetable stock.
Bone Broth also works great for this recipe!
