Chili Crispy Smashed Potatoes Recipe

Description

Crispy smashed potatoes make a great appetizer or side dish. Vegan and Whole30, this recipe will be a family favorite. Included are instructions for pre-cooking the potatoes in the oven, microwave, air fryer, and Instant Pot to reduce cooking time.


Ingredients

Scale
  • 1 pound Small Potatoes - red or white
  • 1 tablespoon Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/4 teaspoon Garlic Powder

OR

  • 1-2 teaspoons Chili Seasoning -  depending on taste and spice preference 

Instructions

  1. Pre-cook the potatoes following one of the steps below. Once the potatoes are tender, preheat the oven to 450 degrees and line a baking sheet with parchment paper. 
  2. Coat the potatoes in olive oil, and use a plate or bowl to smash the potatoes flat. 
  3. Drizzle or spray the flattened potatoes with a little extra oil and sprinkle both sides with the seasoning of choice. 
  4. Place in the oven for 40-50 minutes or until crispy. Remove from the oven and serve plain or with your favorite dipping sauce.

Precooking Potatoes:

Microwave - Poke several holes in the outside of the potato using a fork or knife. Place the potatoes on a microwave-safe plate and cook for 3 minutes. Flip the potatoes and continue cooking for 2-3 minutes or until tender. The time will vary depending on the size of the potatoes and quantity in the microwave. 

Instant Pot - Place the rack in the bottom of the Instant Pot with 1 cup of water or stock. Add the potatoes and cook at high pressure for 8 minutes for small potatoes or 10 minutes for larger potatoes; when the timer goes off, quick release the steam and strain the potatoes in a colander. 

Oven - Place the potatoes on a lined baking sheet and evenly coat each potato with oil. Cook the whole potato at 400 degrees until fork-tender, about 40-50 minutes. Remove from the oven and smash as directed above. {For this method, use small potatoes as larger will require more cooking time and could dry out before they become crispy}. 

Air Fryer - Like with the oven directions, place the whole, small potatoes in the air fryer and cook at 400 degrees until tender, about 20-30 minutes. Remove from the air fryer, smash and return to the air fryer to continue cooking for an additional 20 minutes. 

 

 

Notes

Serve plain as a side dish or with a dipping sauce like ketchup or sour cream.
