Description

Cajun Shrimp and Cauliflower Grits – A healthy take on a traditional southern recipe. Whole30 and Paleo, this recipe is a quick and tasty dish. 


Ingredients

Cauliflower Grits

  • 1 Tablespoon Ghee
  • ¼ Onion – Diced
  • 2 Cloves Garlic – Chopped
  • 16 oz. Cauliflower Rice
  • ½ Cup Chicken Stock or Bone Broth
  • ½ Cup Almond Milk
  • 2 Tablespoon Nutritional Yeast
  • Salt and Pepper to Taste

Cajun Shrimp

  • 16 oz. Shrimp – Large or Jumbo {peeled and deveined}
  • 2 Tablespoon Cajun Seasoning
  • 1 Tablespoon Oil

Instructions

Cauliflower Rice

  1. In a stockpot, heat over medium heat. Once heated, add ghee and onion to the pan. Cook 4 minutes to soften. Add garlic and cook 1 additional minute.
  2. Add the cauliflower to the pan and stir.
  3. Add chicken stock and almond milk. Season with salt and pepper to taste. Reduce heat to low and cover with a lid.
  4. Cook for 15 minutes. Once complete, stir in nutritional yeast and serve with Cajun Shrimp.

Cajun Shrimp

  1. Heat a skillet over medium-high heat.
  2. In a large bowl, toss together the shrimp, oil, and Cajun seasoning to thoroughly coat.
  3. Once the pan is hot, add the shrimp in a single layer. Cook 3 minutes or until the cooked side becomes opaque and slightly white. Flip and cook for an additional 2-3 minutes.
  4. Remove from heat and serve with cauliflower grits.
